KFC Veg Zinger (Copycat)

A vegetarian twist on the classic Zinger, popular in KFC’s international menus. The Veg Zinger features a crispy, spicy vegetable patty that delivers the signature fiery crunch, paired with lettuce, tomato, and creamy mayo on a soft sesame bun. Perfect for those craving the Zinger experience without the chicken.
FOR THE VEG PATTY:
• 1 cup (150g) mixed vegetables, finely chopped (carrot, peas, beans)
• 1/2 cup (60g) mashed potato
• 1/4 cup (30g) breadcrumbs
• 1/2 tsp chili powder
• 1/2 tsp paprika
• 1/4 tsp black pepper
• 1/2 tsp salt
• 1 tsp cornflour
• 2 tbsp vegetable oil, for shallow frying
FOR THE SPICY MAYO:
• 1/2 cup (120ml) mayonnaise
• 1 tsp hot sauce
• 1/2 tsp paprika
• pinch salt
FOR ASSEMBLY:
• 2 sesame burger buns, toasted
• 1/2 cup (20g) shredded iceberg lettuce
• 2 tomato slices
• vegetable oil, for frying
Recipe
- 1Prepare the veg patty. In a bowl, mix chopped vegetables, mashed potato, breadcrumbs, chili powder, paprika, black pepper, salt, and cornflour until well combined. Form into two burger-sized patties.
- 2Fry the patties. Heat vegetable oil in a skillet over medium heat. Fry the patties for about 3–4 minutes per side until golden brown and crispy. Drain on paper towels.
- 3Make the spicy mayo. In a small bowl whisk together mayonnaise, hot sauce, paprika, and a pinch of salt until smooth and creamy.
- 4Toast the buns lightly in a skillet or griddle until warm and slightly golden.
- 5Assemble the burger: bottom bun with a spoonful of spicy mayo, crispy veg patty, shredded lettuce, tomato slices, another light spread of mayo, then top bun. Serve immediately while the patty is hot and crispy.
