Onion Bomb Burger

This one is built around a massive onion ring stuffed with beef and wrapped in bacon. It cooks into a juicy, smoky “bomb” with soft onion inside and crispy bacon outside, then gets finished with melted cheddar and crunchy fried onions. It’s heavy, messy, and worth it.
FOR THE ONION BOMB:
• 2 large red onions
• 1 lb (500g) ground beef, 80/20
• 1 tsp salt
• 1/2 tsp black pepper
• 10–12 strips bacon
FOR THE TOPPING:
• 1/2 cup crispy fried onions (store-bought or homemade)
• 1/2 small red onion, roasted or sautéed
FOR THE SAUCE:
• 2 tbsp mayo
• 1 tbsp ketchup
• 1 tsp yellow mustard
• 1 tsp bbq sauce
• 1/2 tsp smoked paprika
• 1/4 tsp black pepper
FOR ASSEMBLY:
• 2 brioche buns, toasted
• 2 slices cheddar cheese
SERVING:
You get a thick, juicy center wrapped in bacon with soft onion layers inside. The outside should be slightly crispy from the bacon, with melted cheese on top. Cut it in half so you can see the stuffed onion core. Serve hot, it falls apart if it sits too long
Recipe
- 1Slice the red onions into thick rings, about 1 to 1.5 inches (3–4 cm). Separate them and take one large ring and place a smaller ring inside it, leaving space between the layers.

- 2Fill the gap between the onion rings with ground beef. Pack it firmly so there are no air gaps. Season all sides with salt and black pepper.

- 3Wrap the entire onion and beef structure with bacon strips, overlapping slightly so everything is covered. Press it gently so it holds together.

- 4Place the onion bombs on a tray and cook in the oven at 200C / 400F for 25–30 minutes until the bacon is cooked and starting to crisp.
- 5Take them out, place cheddar slices on top, and return to the oven for 2–3 minutes until the cheese is fully melted but not running off.
- 6Mix the sauce. Combine mayo, ketchup, mustard, bbq sauce, smoked paprika, and black pepper until smooth.
- 7Toast the brioche buns cut-side down over medium heat for about 60–90 seconds until golden.
- 8Assemble. Bottom bun, sauce, a bit of roasted onion, the onion bomb with melted cheese, crispy fried onions, more sauce, top bun. Press lightly so it stays together.
