Sloppy Smash Supreme

This burger is half smashburger, half sloppy joe. You start with a classic smash patty and cheese, then pile a saucy beef and bean mixture right on top. The smoky burger sauce, pickles, melted cheese, and messy sloppy filling all mix together. It's big, saucy, and absolutely not a clean burger to eat. Bring napkins.
Ingredients
FOR THE PATTY
• 500g ground beef, 80/20
• 1 tsp salt
• 1/2 tsp black pepper
FOR THE SMOKY BURGER SAUCE
• 2 tbsp mayo
• 1 tbsp ketchup
• 1 tsp yellow mustard
• 1 tsp pickle relish
• 1 tsp sriracha
• 1/2 tsp smoked paprika
• 1 pinch black pepper
• 1 small garlic clove, finely grated
FOR THE SLOPPY BEEF TOPPING
• 1 tbsp vegetable oil
• 1 small onion, finely diced
• 1/2 lb ground beef
• 1/2 cup crushed tomatoes
• 1/4 cup cooked beans (kidney or pinto)
• 2 tbsp ketchup
• 1/2 tsp smoked paprika
• 1 pinch black pepper
• 1 pinch salt
FOR ASSEMBLY
• 2 brioche buns, toasted
• 4 slices american cheese
• 6 pickle slices
SERVING
The burger should be tall and messy with the sloppy beef mixture spilling slightly over the edges. The cheese should be melted into the smash patties and the sauce should drip into the bun. Wrap tightly in parchment paper and cut in half so the layers of smash burger and sloppy topping are visible.
Recipe
- 1Start with the sauce so the flavors blend. Mix 2 tbsp mayo, 1 tbsp ketchup, 1 tsp mustard, 1 tsp relish, 1 tsp sriracha, 1/2 tsp smoked paprika, a pinch of black pepper, and one finely grated garlic clove. Stir well and put it in the fridge.

- 2Make the sloppy beef topping. Heat 1 tbsp oil in a skillet over medium heat. Add the diced onion and cook about 4 minutes until soft and slightly golden.
- 3Add 1/2 lb ground beef to the pan and break it apart with a spatula. Cook about 5 minutes on medium-high heat until browned and crumbly.
- 4Add 1/2 cup crushed tomatoes, 2 tbsp ketchup, 1/4 cup cooked beans, 1/2 tsp smoked paprika, salt, and black pepper. Stir and simmer about 6–8 minutes on medium-low until thick and saucy. It should look like a sloppy joe mixture, not watery.

- 5Divide the 500g beef into 4 loose balls about 125g each. Heat a cast iron skillet until ripping hot on high heat. Place a beef ball down and smash it flat immediately with a spatula. Season with salt and pepper.
- 6Cook the smash patty about 2 minutes until a dark brown crust forms. Flip it, add a slice of american cheese immediately, and cook another 60–90 seconds until the cheese melts.
- 7Toast the brioche buns cut-side down in a pan over medium heat for about 60 seconds until golden.
- 8Assemble the burger. Bottom bun, a generous layer of sauce, pickle slices, two smash patties with melted cheese, a big scoop of the sloppy beef and bean mixture, another spoon of sauce on top, then the top bun.
